“Kaisha no Shikumi: Franchising”, Chapter 6: Marugame Seimen: Company-Operated Only in Japan, Company-Operated and Franchised Overseas

Book’s reference date 2026-08-19 / data last checked 2026-10-20

Key points in this volumeA chain's profits depend on how the money is divided, not just on how many stores it has.

Marugame Seimen has 887 shops in Japan (as of the end of March 2026), and every one of the 887 is company-operated. There is not a single franchise.

The company explains that operating its own shops, rather than franchising, is the best fit. That choice is connected to keeping the noodle-making process inside the shop.

Figures from the book

How money moves at Toridoll Holdings: all 887 Marugame Seimen shops in Japan are company-operated
How money moves at Marugame Seimen (figure from Chapter 6 of “Kaisha no Shikumi: Franchising”, year ended March 2026, in Japanese)

The Move That Changed Toridoll

It kept Marugame Seimen in Japan company-operated and launched products to take away.

For the year ended March 2021, Toridoll Holdings had an operating loss of ¥7.3 billion ($45.6 million). Closures and shortened hours ran on through the pandemic, and with the work of milling and cutting noodles in the store still on its hands, customer counts and sales fell sharply. Marugame Seimen in Japan stayed company-operated through that period too. In April 2021, at the start of the year ended March 2022, it launched the Marugame Udon Bento, which passed 20 million servings within the year ended March 2022. The company explains that this made up for the earnings lost as dine-in fell away, and that in stores with a dedicated takeaway window there was a knock-on effect on tempura sales as well. The Marugame Udo-natsu, launched on June 25, 2024, reached a cumulative 13.7 million servings by the end of March 2025. For the year ended March 2026, the business margin of the Marugame Seimen segment was 16.0%, far above the consolidated operating margin of 3.8%.

Coverage in the book

  • The Company Runs All 887 Stores Itself
  • The Reason the Company Gives for Not Franchising
  • "Company-Operated Only" Applies to Japan
  • A Business Margin of 16.0% and an Operating Margin of 3.8%
  • It Buys Overseas and Writes Down Overseas
