“Kaisha no Shikumi: Raising Prices”, Chapter 1: Saizeriya and Sushiro: The Same Restaurant Business, Opposite Ways of Moving Prices

Book’s reference date 2026-08-18 / data last checked 2026-10-20

Key points in this volumePricing power comes from structure, not the product.

FOOD & LIFE COMPANIES (Sushiro) separates price bands by the colour of the plate. It keeps the room to move prices themselves inside the restaurant.

Where Saizeriya holds prices still and adjusts elsewhere, this company moves the mix of price bands. The same restaurant business, facing prices from opposite directions.

Figures from the book

How money moves at FOOD & LIFE COMPANIES: what the customer pays becomes sales, with price bands separated by plate colour
How money moves at Sushiro (figure from Chapter 1 of “Kaisha no Shikumi: Raising Prices”, in Japanese)

The Move That Changed Sushiro

It withdrew the ¥100 plate (before tax) after 38 years and rebuilt the price tiers themselves.

In the year ended September 2022, Sushiro's operating profit was ¥10.1 billion ($63.1 million), an operating margin of 3.6%. In October 2022, just after the revision, the existing-store customer count fell to 80.2%. On October 1, 2022, the company ended the ¥100 plate (before tax) and moved to three price tiers: suburban, semi-urban, and urban. In May 2023, it expanded the cheapest yellow plate to more than 80 items, added a black plate ¥100 cheaper than the ¥360 one, and introduced a white plate with no fixed price. Operating profit for the year ended September 2025 was ¥36.1 billion, up 54.4%, an operating margin of 8.40% (calculated). Sushiro overseas earned segment profit of ¥16.3 billion in the same year.

Coverage in the book

  • A ¥300 Doria and a ¥100 Plate That Disappeared
  • The Day the ¥100 Plate Disappeared
  • What Does Sushiro Earn From Now?
  • After Ending the ¥100 Plate, It Rebuilt the Price Tiers
  • Food & Life Companies' Nine Fiscal Years and Its Dividend Policy
